Prepare the Filling
Boil the potatoes until tender. Peel and mash them. In a pan, heat oil and sauté chopped onions until golden brown. Add ginger, green peas, coriander powder, cumin seeds, garam masala, and salt. Cook for 5 minutes and mix in the mashed potatoes. Let the mixture cool.

Make the Dough
In a bowl, combine 2 cups of all-purpose flour, 1/2 tsp of salt, and 2 tbsp of oil. Gradually add water and knead into a smooth dough. Cover with a damp cloth and let it rest for 30 minutes.

Assemble the Samosas
Divide the dough into small balls. Roll each ball into a thin circle. Cut the circle in half, forming two semi-circles. Take one semi-circle, form a cone shape, and seal the edges. Fill the cone with the potato-pea mixture and seal the top edge to form a triangle.

Fry the Samosas
Heat oil in a deep frying pan. Once hot, carefully add the samosas and fry until golden brown and crispy. Remove and drain on paper towels.
