Marinate the Chicken
In a large bowl, combine the chicken pieces, grated ginger, minced garlic, soy sauce, salt, and black pepper. Mix well and let it marinate for at least 30 minutes.

Prepare the Breading
In a separate bowl, whisk together the cornstarch and all-purpose flour. In another bowl, beat the eggs.

Coat the Chicken
Take each marinated chicken piece, dip it in the egg mixture, then coat it thoroughly with the flour-cornstarch mixture.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken
Carefully place the coated chicken pieces in the hot oil, frying in batches to avoid overcrowding. Fry for about 5-7 minutes or until golden brown and cooked through.

Drain and Serve
Remove the fried chicken from the oil and drain on paper towels. Serve hot, garnished with fresh herbs or lemon wedges if desired.
