    Prepare the Broth

    In a pot, combine dried porcini mushrooms and water. Bring to a boil, then reduce heat and simmer for 30 minutes. Strain the broth and set aside.

    Cook the Udon Noodles

    In a separate pot, cook udon noodles according to package instructions. Drain and set aside.

    Roast the Tofu

    Preheat the oven to 400°F (200°C). Cut the tofu into cubes, toss with soy sauce and a drizzle of garlic oil. Roast in the oven for 25 minutes until golden.

    Sauté the Mushrooms

    In a skillet, heat remaining garlic oil over medium heat. Add the smoked trumpet mushrooms and sauté until tender, about 5-7 minutes.

    Combine and Serve

    In serving bowls, add udon noodles, pour over porcini broth, top with roasted tofu, sautéed mushrooms, and garnish with fresh rosemary. Season with salt and pepper to taste.
