Yuka and Eggplant Sauce

Boil Yuka
Peel the yuka and cut it into large chunks. In a large pot, bring 4 cups of water to a boil. Add the yuka chunks and boil for about 20-25 minutes, or until tender. Drain and set aside.

Fry Yuka
In a large frying pan, heat the vegetable oil over medium heat. Add the boiled yuka chunks and fry for about 5-7 minutes, turning occasionally, until they are golden brown and crispy. Remove from the pan and set aside on a paper towel to drain excess oil.

Finish Eggplant Sauce
Add the chopped tomato, salt, and black pepper to the pan. Cook for another 5-7 minutes, until the eggplant is soft and the flavors meld together. Adjust seasoning to taste.

Serve
Place the crispy fried yuka on a serving plate and spoon the eggplant sauce over the top. Enjoy!
