    Prepare the Meat

    Clean and cut the lamb (or goat or beef) into bite-sized pieces. If using tripe, cut it into small pieces as well.

    Cook the Meat

    In a large pot, add the meat pieces, chopped onion, seasoning cubes, and salt. Cover with water and boil until the meat is tender. This may take about 1-1.5 hours depending on the type of meat.

    Blend the Vegetables

    While the meat is cooking, blend the tomatoes and bell pepper together until smooth.

    Prepare the Egusi Mixture

    In a bowl, mix the egusi seeds with a bit of water to form a thick paste. Set aside.

    Combine Ingredients

    Once the meat is tender, add the blended tomato and bell pepper mixture to the pot, followed by the egusi paste and ground crayfish. Stir well to combine.

    Cook the Egusi

    Add vegetable oil to the pot and let everything cook together on medium heat for about 20-30 minutes, stirring occasionally until the egusi is cooked and the oil rises to the top.

    Final Seasoning

    Taste and adjust seasoning with more salt or seasoning cubes if necessary.

    Serve hot with fufu or white rice.
