Marinade and Chicken
Method
Preparation and Cooking
- 1
Prepare the Marinade
In a blender or food processor, combine green onions, garlic, thyme, allspice, brown sugar, soy sauce, lime juice, scotch bonnet pepper, salt, black pepper, and olive oil. Blend until smooth.
- 2
Marinate the Chicken
Place the chicken thighs in a large bowl or a resealable plastic bag. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the bowl and refrigerate for at least 2 hours, preferably overnight.
- 3
Preheat the Grill
Preheat your grill to medium-high heat.
- 4
Grill the Chicken
Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.
- 5
Serve
Remove the chicken from the grill and let it rest for a few minutes before serving. Enjoy with rice and peas or a fresh salad.
