Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Using a fork, gradually incorporate the flour into the eggs until a dough forms.

    Knead the Dough

    Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes at room temperature.

Filling Preparation

    Prepare the Filling

    In a medium bowl, combine the ricotta cheese, Parmesan cheese, cooked spinach, salt, black pepper, and nutmeg. Mix well until all ingredients are combined.

Ravioli Assembly

    Roll Out the Dough

    After the dough has rested, divide it into quarters. Roll out one piece at a time using a pasta machine or a rolling pin until very thin (about 1/16 inch thick).

    Cut and Fill the Ravioli

    Cut the rolled dough into squares or circles, about 2 inches in diameter. Place a teaspoon of filling in the center of each square/circle. Moisten the edges with water and fold over to create a pocket. Press to seal and remove any air.

Sauce Preparation

    Make the Sauce

    In a saucepan over medium heat, add olive oil and minced garlic. Sauté for about 1 minute until fragrant. Add the crushed tomatoes and basil. Season with salt and pepper to taste. Simmer for about 15 minutes.

Cooking the Ravioli

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for about 4-5 minutes or until they float to the surface. Remove with a slotted spoon.

    Serve

    Plate the ravioli and top with the prepared sauce. Garnish with fresh basil or more Parmesan cheese if desired.
