Method
Cooking Pasta
- 1
Boil Water
In a large pot, bring salted water to a boil over high heat.
- 2
Cook Penne
Add the penne pasta to the boiling water and cook according to package instructions until al dente, usually about 10-12 minutes.
- 3
Drain Pasta
Once cooked, drain the pasta in a colander and set aside. Reserve about 1 cup of pasta water.
Making the Sauce
- 4
Sauté Garlic
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- 5
Add Red Pepper Flakes
Stir in the crushed red pepper flakes and cook for an additional 30 seconds.
- 6
Add Tomato Puree
Pour in the tomato puree and bring to a simmer. Cook for about 5 minutes, stirring occasionally.
- 7
Incorporate Vodka
Add the vodka to the sauce, allowing it to simmer for an additional 5 minutes. This will help to cook off some of the alcohol.
- 8
Stir in Heavy Cream
Slowly pour in the heavy cream, stirring continuously until the sauce is well combined and creamy. Season with salt and black pepper to taste.
- 9
Add Fresh Basil
Stir in the chopped fresh basil and mix well to incorporate.
Combining Pasta and Sauce
- 10
Combine
Add the drained penne pasta to the skillet with the sauce. Toss to coat the pasta evenly with the sauce.
- 11
Adjust Consistency
If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.
- 12
Serve
Serve hot, garnished with grated Parmesan cheese and additional fresh basil if desired.
