Method

Preparation

  1. 1

    Clean the Mussels

Rinse the mussels under cold water, scrubbing the shells with a brush to remove any dirt or debris. Discard any mussels that are open and do not close when tapped.

  2. 2

    Chop the Garlic and Parsley

Mince the garlic cloves and roughly chop the fresh parsley.

Cooking

  1. 3

    Cook the Pasta (Optional)

If using pasta, cook spaghetti or linguine according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.

  2. 4

    Prepare the Sauce

In a large skillet or pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  3. 5

    Add Spice and Tomatoes

Stir in the red pepper flakes and crushed tomatoes. Cook for about 5 minutes, allowing the flavors to meld.

  4. 6

    Add Wine and Mussels

Pour in the white wine and bring to a simmer. Add the cleaned mussels, cover with a lid, and cook for 5-7 minutes, shaking the pot occasionally, until the mussels open.

  5. 7

    Season and Finish

Season the sauce with salt and black pepper to taste. Stir in the chopped parsley just before serving.

  6. 8

    Serve

If using pasta, serve the mussels over the cooked spaghetti or linguine, spooning the sauce over the top. Enjoy!
