Preparing the Calamari

Clean and Cut Calamari
If not already done, clean the calamari by removing the head and innards. Rinse well under cold water and cut into ½ inch rings.

Prepare the Breading Station
In a shallow bowl, combine all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. In another bowl, whisk together eggs and milk until well combined.
Frying the Calamari

Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Calamari
Dip each calamari ring into the egg mixture, allowing excess to drip off, then coat it in the flour mixture, pressing lightly to adhere.

Carefully place the breaded calamari rings into the hot oil, in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy.

Using a slotted spoon, remove the fried calamari and place them on a plate lined with paper towels to drain excess oil.

In a small bowl, combine mayonnaise, ketchup, lemon juice, hot sauce, and garlic powder. Stir until well mixed.
