Prepare the Crab Cake Mixture
In a large mixing bowl, combine the crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, chopped green onions, bread crumbs, beaten egg, salt, and black pepper. Mix gently until well combined, being careful not to break the crab meat too much.

Form the Crab Cakes
Using your hands, form the mixture into patties about 2 inches in diameter and 1 inch thick. Place them on a baking sheet lined with parchment paper. You should have about 8 crab cakes.

Chill the Crab Cakes
Refrigerate the crab cakes for at least 30 minutes to help them hold their shape during cooking.

Heat the Oil
In a large skillet, heat the olive oil over medium heat until hot but not smoking.

Cook the Crab Cakes
Carefully place the crab cakes in the skillet without overcrowding. Cook for about 4-5 minutes on each side or until they are golden brown and cooked through. You may need to do this in batches.
Serving

Serve the Crab Cakes
Transfer the cooked crab cakes to a serving platter. Serve hot with lemon wedges and tartar sauce on the side.
