For the Filling
For Breading
For Frying
Method
Preparing the Risotto
- 1
- 2
Add the Rice
Stir in the Arborio rice and cook for 2-3 minutes, allowing it to toast slightly while stirring continuously.
- 3
Add the Broth Gradually
Begin adding the chicken or vegetable broth, one ladle at a time, stirring frequently. Wait until the liquid is absorbed before adding more. Continue this process until the rice is creamy and al dente, about 18-20 minutes.
- 4
Finish the Risotto
Once the rice is cooked, stir in the grated Parmesan cheese, and season with salt and black pepper to taste. Spread the risotto on a baking sheet to cool completely.
Preparing the Filling
- 5
Mix the Filling
In a bowl, combine the cubed mozzarella cheese and chopped fresh basil. Set aside.
Forming the Arancini
- 6
Shape the Balls
Once the risotto has cooled, take a small amount (about 2 tablespoons) and flatten it in your palm. Place a small amount of the filling in the center, then mold the risotto around it to form a ball. Repeat until all ingredients are used.
Breading the Arancini
- 7
- 8
Bread the Arancini
Roll each risotto ball in flour, dip it in the beaten eggs, and then coat it with breadcrumbs. Ensure they are well coated.
Frying the Arancini
- 9
Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).
- 10
Fry the Arancini
Carefully add the breaded arancini to the hot oil in batches. Fry until golden brown and crispy, about 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels.
