Pasta Preparation

    Mixing the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center.

    Forming the Dough

    Crack the eggs into the well and gradually mix the flour into the eggs using a fork until a shaggy dough forms.

    Kneading the Dough

    Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.

    Resting the Dough

    Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

    Cutting the Pasta

    After resting, roll out the dough using a pasta machine or a rolling pin until thin and cut into ribbons to form tagliatelle.

Bolognese Sauce Preparation

    Sautéing the Vegetables

    In a large skillet, heat olive oil over medium heat. Add chopped onion, carrot, and celery. Sauté for about 5-7 minutes until softened.

    Browning the Meat

    Add ground beef and ground pork to the skillet. Cook until browned, stirring frequently for about 8-10 minutes.

    Adding Tomato Paste

    Stir in the tomato paste and cook for another 2 minutes until it darkens slightly.

    Adding Red Wine

    Pour in the red wine and let it simmer for about 5 minutes until the wine has reduced by half.

    Simmering the Sauce

    Add crushed canned tomatoes, milk, salt, black pepper, and bay leaf. Bring to a gentle simmer and cook for 30-40 minutes, stirring occasionally.

Cooking and Serving

    Cooking the Tagliatelle

    While the sauce simmers, bring a large pot of salted water to a boil. Add the tagliatelle and cook for 3-4 minutes until al dente.

    Combining Pasta and Sauce

    Drain the pasta and reserve a cup of pasta water. Add the pasta to the Bolognese sauce, tossing to combine. If the sauce is too thick, add a bit of the reserved pasta water.

    Serve hot, topped with grated Grana Padano cheese.
