1. Prepare the Chicken

Preheat your oven to 200°C (400°F). In a large bowl, combine the olive oil, minced garlic, chopped rosemary, salt, and black pepper. Add the chicken pieces and coat them thoroughly with the marinade. Let it marinate for at least 30 minutes.

2. Bake the Chicken

Place the marinated chicken in a baking dish and bake in the preheated oven for 30-35 minutes, or until the internal temperature reaches 75°C (165°F) and the chicken is golden brown.

3. Prepare the Vegetables

While the chicken is baking, wash the broccolini and baby carrots. In a pot of boiling salted water, blanch the broccolini for 2-3 minutes until bright green, then remove and set aside. Boil the baby carrots for about 5-7 minutes until tender.

4. Sauté the Vegetables

In a large skillet, heat a drizzle of olive oil over medium heat. Add the blanched broccolini and baby carrots, season with salt and pepper, and sauté for about 5 minutes until heated through and slightly caramelized.

Mashed Potatoes

5. Cook the Potatoes

Peel and cut the potatoes into quarters. Place them in a large pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

6. Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy. Adjust seasoning to taste.
