Red Wine Reduction Sauce

Beef Tenderloin

    Prepare the Beef

    Season the beef tenderloin pieces with salt and black pepper on all sides.

    Grill the Beef

    Heat olive oil in a grill pan over medium-high heat. Grill the beef tenderloin for about 4-5 minutes on each side for medium-rare, or until your desired doneness is achieved. Remove from heat and let it rest.

Red Wine Reduction Sauce

    Sauté Shallots

    In the same pan used for grilling, add the minced shallots and sauté until they are translucent.

    Add Wine and Broth

    Pour in the red wine and beef broth, scraping the bottom of the pan to deglaze. Bring to a boil and then reduce to a simmer.

    Thicken the Sauce

    Add fresh thyme and simmer until the sauce has reduced by half, about 15 minutes. Stir in butter until melted and smooth.

Mixed Mushrooms

    Prepare the Mushrooms

    Clean and chop the mixed mushrooms. Mince the garlic.

    Sauté the Mushrooms

    In a skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute. Add the mushrooms, salt, and pepper, and sauté until the mushrooms are golden brown, about 5-7 minutes.

Mashed Potatoes

    Cook the Potatoes

    Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth. Season with salt and black pepper to taste.
