Make the Dough
Once the potatoes are cool enough to handle, peel and mash them until smooth. In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms.

Shape the Gnocchi
On a floured surface, divide the dough into 4 pieces. Roll each piece into a long rope about 1 cm thick. Cut into 2 cm pieces and use a fork to create ridges on each piece.

Brown the Meat
Add the wild boar meat and cook until browned on all sides, about 10 minutes.

Cook the Gnocchi
Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.

Combine and Serve
In a large serving dish, combine the gnocchi, wild boar ragu, and sautéed mushrooms and root vegetables. Grate Grana Padano cheese over the top before serving.
