Preparing the Vegetables

    Roasting the Potatoes

    Preheat your oven to 200°C (400°F). Toss the diced Yukon gold potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, or until golden and crisp, turning halfway through.

    Blanching the Broccolini and Carrots

    In a separate pot, bring salted water to a boil. Add the baby carrots and broccolini and blanch them for 2-3 minutes until bright in color and just tender. Drain and set aside.

Cooking the Seafood

    Preparing the Lemon-Olive Oil Sauce

    In a small bowl, whisk together the olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper to taste. Set aside.

    Grilling the Seafood

    Preheat a grill or grill pan over medium-high heat. Brush the fish fillet, salmon, scallops, and shrimp lightly with olive oil and season with salt and pepper. Grill the fish fillet and salmon for about 4-5 minutes per side, scallops for about 2-3 minutes per side, and shrimp for about 2-3 minutes per side until cooked through and slightly charred.

    Drizzling the Sauce

    Once the seafood is cooked, remove from the grill and drizzle the lemon-olive oil sauce over the top while still warm.

Serving

    Plating the Dish

    On a large serving platter, arrange the roasted Yukon gold potatoes, blanched broccolini, and carrots. Place the grilled seafood on top and drizzle any remaining lemon-olive oil sauce over the entire dish. Serve immediately.
