Method

Cooking the Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

Preparing the Sauce

    Sauté Aromatics

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Be careful not to burn the garlic.

    Cook Cuttlefish

    Add the Mediterranean cuttlefish to the skillet and cook for about 3-4 minutes until they are tender and opaque. Stir occasionally.

    Deglaze with Wine

    Pour in the white wine and allow it to simmer for 2-3 minutes, scraping the bottom of the skillet to release any browned bits.

    Add Cuttlefish Ink

    Stir in the cuttlefish ink and red chili flakes, mixing well to combine. Cook for another 1-2 minutes.

Combining

    Mix Pasta and Sauce

    Add the cooked spaghetti to the skillet, tossing it with the sauce. If the sauce is too thick, add reserved pasta water bit by bit until desired consistency is reached.

    Season

    Season with salt and black pepper to taste. Toss in freshly chopped parsley just before serving.

Serving

    Plate the Dish

    Serve the spaghetti al nero immediately, garnished with extra parsley and a drizzle of olive oil if desired.
