    Prepping the Ingredients

    Start by washing the zucchini thoroughly. Cut off the ends and slice them into thin rounds or half-moons, approximately 1/4 inch thick.

    Preparing Roasted Tomatoes

    If using fresh tomatoes, preheat your oven to 400°F (200°C). Cut the tomatoes in half, drizzle with olive oil, and season with salt and pepper. Roast for about 25-30 minutes or until soft and slightly caramelized. If using canned roasted tomatoes, simply set them aside.

    Preparing the Cheese

    Slice the fresh mozzarella and burrata into bite-sized pieces. Grate the Grana Padano cheese and set aside.

    Sautéing the Zucchini

    In a skillet, heat a tablespoon of olive oil over medium heat. Add the sliced zucchini, season with salt and pepper, and sauté until tender and slightly golden, about 5-7 minutes. Remove from heat and let cool slightly.

    In a large serving bowl, layer the sautéed zucchini, fresh mozzarella, and burrata. Add the roasted tomatoes on top.

    Drizzle basil olive oil over the top. Garnish with fresh mint leaves and sprinkle grated Grana Padano cheese. Adjust seasoning with salt and black pepper to taste.
