Main Ingredients

For Sautéed Spinach

For Mashed Potatoes

Method

Preparing the Veal

  1. 1

    Tenderizing the Veal

Gently pound the veal cutlets to about 1/4 inch thickness using a meat mallet or rolling pin. Season both sides with salt and pepper.

  2. 2

    Cooking the Veal

In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat. Once hot, add the veal cutlets and cook for about 2-3 minutes per side until browned and cooked through. Remove from skillet and set aside.

Making the Mushroom Sauce

  1. 3

    Sautéing the Mushrooms

In the same skillet, add the remaining olive oil and butter. Once melted, add the mixed mushrooms. Sauté for about 5-7 minutes until they are tender and browned.

  2. 4

    Adding Marsala Wine

Pour in the marsala wine, scraping the bottom of the skillet to deglaze. Bring to a simmer and let it reduce for about 5 minutes, allowing the flavors to meld. Season with salt and pepper.

  3. 5

    Combining with Veal

Return the cooked veal cutlets to the skillet, spooning sauce over them. Cook for another 1-2 minutes to heat through.

Sautéing the Spinach

  1. 6

    Cooking the Spinach

In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the fresh spinach and cook until wilted, about 3-4 minutes. Season with salt and pepper to taste.

Making Mashed Potatoes

  1. 7

    Boiling the Potatoes

In a large pot, add the peeled and chopped potatoes. Cover with water and bring to a boil. Cook for about 15-20 minutes until fork-tender.

  2. 8

    Mashing the Potatoes

Drain the potatoes and return them to the pot. Add butter and milk. Mash until smooth and creamy. Season with salt and pepper to taste.

Final Assembly

  1. 9

    Plating the Dish

On a large plate, place a serving of mashed potatoes, top with sautéed spinach, and then place the veal cutlets with mushroom sauce on top. Serve immediately.
