Preparing the Veal

Tenderizing the Veal
Gently pound the veal cutlets to about 1/4 inch thickness using a meat mallet or rolling pin. Season both sides with salt and pepper.

Cooking the Veal
In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat. Once hot, add the veal cutlets and cook for about 2-3 minutes per side until browned and cooked through. Remove from skillet and set aside.

Adding Marsala Wine
Pour in the marsala wine, scraping the bottom of the skillet to deglaze. Bring to a simmer and let it reduce for about 5 minutes, allowing the flavors to meld. Season with salt and pepper.

Combining with Veal
Return the cooked veal cutlets to the skillet, spooning sauce over them. Cook for another 1-2 minutes to heat through.
Sautéing the Spinach

Cooking the Spinach
In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the fresh spinach and cook until wilted, about 3-4 minutes. Season with salt and pepper to taste.
