Preparation of Rice

Rinse the Rice
Rinse 1 cup of rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a medium saucepan, add the rinsed rice and 2 cups of vegetable broth. Bring to a boil over medium heat, then reduce to low, cover, and cook for 15-20 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes.

Sauté the Onions and Garlic
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced red onion and minced garlic, and sauté for 3-4 minutes until the onion is translucent.

Stir in the diced bell pepper and zucchini, cooking for another 5 minutes until they soften.

Add the halved cherry tomatoes to the skillet and cook for an additional 2-3 minutes until they are slightly softened.
