Beef Tenderloin

Finishing Touches

Method

Risotto Preparation

  1. 1

    Sauté Aromatics

In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.

  2. 2

    Toast the Rice

Stir in the Arborio rice, cooking for about 2 minutes until the rice is lightly toasted and coated in the oil.

  3. 3

    Add Wine

Pour in 1 cup of white wine, stirring constantly until the liquid is mostly absorbed.

  4. 4

    Add Broth Gradually

Begin adding the beef broth, one ladle at a time, stirring frequently. Wait until the liquid is absorbed before adding more, continuing until the rice is creamy and al dente, about 18-20 minutes.

  5. 5

    Season

Season the risotto with 1 teaspoon of salt and 1 teaspoon of black pepper. Remove from heat.

Beef Tenderloin Cooking

  1. 6

    Prepare the Beef

Season the beef tenderloin with 1 teaspoon of salt and 1 teaspoon of black pepper.

  2. 7

    Sear the Beef

In a skillet, heat 1 tablespoon of olive oil over high heat. Sear the beef tenderloin on all sides until browned, about 2-3 minutes per side.

  3. 8

    Cook to Desired Doneness

Reduce heat to medium and continue cooking until the beef reaches your desired doneness (130°F for medium-rare). Remove from heat and let rest for 5-10 minutes before slicing.

Mushroom Preparation

  1. 9

    Sauté Mushrooms

In the same skillet used for the beef, add 1 tablespoon of olive oil. Add the mixed mushrooms and minced garlic, sautéing until mushrooms are golden brown, about 5-7 minutes.

  2. 10

    Season Mushrooms

Season with 1 teaspoon of salt and 1 teaspoon of black pepper. Stir well and remove from heat.

Finishing Touches

  1. 11

    Combine Ingredients

Stir the cooked mushrooms into the risotto, followed by the crescenza cheese until melted and creamy.

  2. 12

    Drizzle with Truffle Oil

Finish by drizzling 2 tablespoons of truffle oil over the risotto and serving immediately with sliced beef tenderloin on top.
