Pasta Preparation

Cook the Pasta
In a large pot of boiling salted water, cook the rigatoni pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Cook the Bacon
In a large skillet, heat the olive oil over medium heat. Add the bacon and cook until crispy, about 5-7 minutes. Remove the bacon and set aside, leaving the fat in the skillet.

Sauté Aromatics
In the same skillet, add minced garlic and crushed red pepper flakes. Sauté for 1-2 minutes until fragrant.

Deglaze with Vodka
Carefully add the vodka to the skillet, scraping up any browned bits from the bottom. Allow it to simmer for about 2-3 minutes.

Add Tomatoes and Cream
Add the crushed tomatoes to the skillet, stirring to combine. Reduce heat and let simmer for about 5 minutes. Then, stir in the heavy cream, salt, and black pepper. Let the sauce simmer for another 5 minutes until thickened.

Combine Sauce and Pasta
Add the cooked rigatoni to the skillet, tossing to coat the pasta in the sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Finish with Cheese and Basil
Stir in the crispy bacon, grated Grana Padano cheese, and chopped basil. Mix until the cheese is melted and everything is well combined.
