1. Cook the Paccheri
Bring a large pot of salted water to a boil. Add the paccheri pasta and cook according to package instructions until al dente, usually about 12-14 minutes. Drain and set aside.

In a large skillet or saucepan, heat olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.
3. Add Garlic and Meat
Stir in the minced garlic and cook for 1 more minute. Add the ground beef and ground pork to the pan. Cook until browned, breaking up the meat with a wooden spoon, about 8-10 minutes.
4. Deglaze with Wine
Pour in the red wine and cook for about 2-3 minutes until the wine has mostly evaporated.
5. Add Tomatoes and Simmer
Stir in the crushed tomatoes, tomato paste, salt, black pepper, and bay leaf. Bring the mixture to a simmer, then reduce the heat to low. Cover and let simmer for 30-40 minutes, stirring occasionally.
6. Finish the Ragu
Remove the bay leaf and adjust seasoning if necessary.
Combine and Serve

Add the cooked paccheri to the meat ragu and gently toss to combine, ensuring the pasta is well coated with the sauce.
8. Serve
Serve the paccheri alla Bolognese hot, garnished with grated Grana Padano cheese on top.
