Cook the Paccheri
Bring a large pot of salted water to a boil. Add the paccheri pasta and cook according to package instructions until al dente, usually about 12-14 minutes. Drain and set aside.

In a large skillet or saucepan, heat olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.

Stir in the minced garlic and cook for 1 more minute. Add the ground beef and ground pork to the pan. Cook until browned, breaking up the meat with a wooden spoon, about 8-10 minutes.

Deglaze with Wine
Pour in the red wine and cook for about 2-3 minutes until the wine has mostly evaporated.

Add Tomatoes and Simmer
Stir in the crushed tomatoes, tomato paste, salt, black pepper, and bay leaf. Bring the mixture to a simmer, then reduce the heat to low. Cover and let simmer for 30-40 minutes, stirring occasionally.
