Preparing the Polenta

Cook the Polenta
In a large pot, bring 4 cups of water to a boil. Add 1 cup of polenta and 1 teaspoon of salt, stirring constantly until thickened (about 5-7 minutes). Remove from heat and pour into a greased baking dish. Let it cool and set.

Cooking the Seafood

Sauté Garlic and Tomatoes
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic (4 cloves) and sauté for about 1 minute until fragrant. Add cherry tomatoes (250 grams) and cook until they start to burst (about 3-4 minutes).

Add Seafood
Add mussels, clams, shrimp, and scallops to the skillet. Pour in 150 ml of white wine and sprinkle with red pepper flakes. Cover and cook for about 5-7 minutes, or until the mussels and clams open up and the shrimp and scallops are cooked through.

Finish with Herbs
Once the seafood is cooked, remove the skillet from heat. Stir in chopped fresh parsley (2 tablespoons) and season with salt and pepper to taste.
Serving

Plate the Dish
On each plate, place a few slices of grilled polenta and top with the sautéed seafood mixture. Garnish with additional parsley if desired and serve immediately.
