Method

Cooking the Beef Tenderloin

    Prepare the Tenderloin

    Preheat your grill to medium-high heat. Season the beef tenderloin with olive oil, salt, and black pepper on all sides.

    Grill the Tenderloin

    Place the seasoned beef tenderloin on the hot grill. Cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove from heat and let it rest for a few minutes before slicing.

Making Marsala & Gorgonzola Sauce

    Sauté Garlic

    In a saucepan over medium heat, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant.

    Add Marsala Wine

    Pour in the marsala wine and bring to a simmer. Let it reduce by half, about 3-4 minutes.

    Incorporate Cream and Cheese

    Stir in the heavy cream and gorgonzola cheese. Cook until the cheese is melted and the sauce is smooth, about 2-3 minutes. Stir in the chopped parsley and remove from heat.

Preparing Asparagus

    Toss the asparagus spears in a bowl with olive oil, salt, and black pepper until well coated.

    Place the asparagus on the grill alongside the beef tenderloin, cooking for about 4-5 minutes, turning occasionally until tender and slightly charred.

Making Grilled Polenta

    In a pot, bring water to a boil. Add salt and slowly whisk in the polenta. Reduce heat to low and cook for about 30 minutes, stirring frequently until thickened.

    Stir in grated parmesan cheese until melted and smooth. Pour the polenta into a greased baking dish and let it cool until set.
