    Cook the Orzo

    In a large pot, bring salted water to a boil and add the orzo pasta. Cook according to package instructions until al dente, roughly 8-10 minutes. Drain and set aside.

    While the orzo cooks, rinse the shrimp and scallops under cold water. Pat them dry with paper towels. Cut the lobster tail in half lengthwise, removing any shell fragments.

    Chop the Vegetables

    Mince the garlic and chop the red bell pepper into small pieces. Halve the cherry tomatoes and rinse the spinach thoroughly.

    Roughly chop the fresh parsley and set aside for garnish.

Cooking

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red bell pepper, sautéing for 2-3 minutes until fragrant. Add the cherry tomatoes and spinach, cooking until the spinach is wilted, about 3-4 minutes.
