Pasta Preparation

    Cook the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

Roasted Cherry Tomato Sauce

    Roast the Cherry Tomatoes

    Preheat the oven to 200°C (400°F). In a baking dish, combine cherry tomatoes, olive oil, minced garlic, salt, and black pepper. Toss to coat and spread the tomatoes in a single layer. Roast for 20-25 minutes until the tomatoes are blistered and caramelized.

    Make the Sauce

    Once roasted, transfer the cherry tomatoes to a blender or food processor. Add fresh basil leaves and blend until smooth. Adjust seasoning if necessary.

Fava Bean Purée

    Prepare the Fava Bean Purée

    In a food processor, combine the cooked fava beans, lemon juice, olive oil, and minced garlic. Blend until smooth. Season with salt and black pepper to taste.

Assembly

    Combine and Serve

    In a large serving bowl, combine the cooked spaghetti with the roasted cherry tomato sauce, mixing well. Serve with a generous dollop of fava bean purée on top and sprinkle with stracciatella cheese. Garnish with additional basil if desired.
