Method
Pasta
- 1
Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving some pasta water.
Roasted Cherry Tomato Sauce
- 2
Prepare the Cherry Tomato Sauce
Preheat your oven to 200°C (400°F). In a baking dish, combine the cherry tomatoes, olive oil, minced garlic, and salt. Toss to coat the tomatoes evenly. Roast in the oven for about 25-30 minutes until the tomatoes are blistered and caramelized. Remove from oven and stir in fresh basil.
Fava Bean Purée

Make the Fava Bean Purée
If using fresh fava beans, shell them. If using frozen, thaw them. In a saucepan, bring water to a boil and cook the fava beans for about 2-3 minutes until tender. Drain and rinse under cold water. In a blender, combine the fava beans, lemon juice, minced garlic, salt, and olive oil. Blend until smooth and creamy. Adjust seasoning if necessary.
Assembly
- 4
Combine and Serve
In a large bowl, toss the cooked spaghetti with the roasted cherry tomato sauce, adding reserved pasta water as needed to create a silky sauce. Plate the spaghetti and top with generous dollops of fava bean purée. Finish with pieces of stracciatella cheese on top. Serve immediately.
