Cooking Spaghetti

    Cook the Spaghetti

    In a large pot of salted boiling water, add the spaghetti. Cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside, reserving some pasta water.

Making Roasted Cherry Tomato Sauce

    Roast the Tomatoes

    Preheat the oven to 200°C (400°F). On a baking sheet, toss cherry tomatoes with olive oil, minced garlic, salt, and black pepper. Roast in the oven for 20-25 minutes until they are blistered and soft.

    Blend the Sauce

    Once roasted, transfer the tomatoes and any juices to a blender or food processor. Add chopped basil and blend until smooth. Adjust seasoning if needed.

Making Fava Bean Purée

    Prepare the Fava Beans

    In a pot of boiling water, blanch fava beans for about 2-3 minutes, then transfer them to an ice bath. Once cooled, peel off any tough skins.

    Blend the Purée

    In a food processor, combine the peeled fava beans, lemon juice, olive oil, minced garlic, salt, and black pepper. Blend until smooth, adding a little water if necessary for a creamy consistency.

Assembling the Dish

    Combine and Serve

    In a large mixing bowl, combine the cooked spaghetti with the roasted cherry tomato sauce. If the mixture seems dry, add a splash of reserved pasta water. Serve the spaghetti on plates, topped with fava bean purée and dollops of stracciatella cheese.
