Dough Preparation

    Activate the Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Let sit for about 5-10 minutes until frothy.

    Make the Dough

    In a large mixing bowl, combine flour and salt. Create a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 8-10 minutes, until smooth and elastic.

    Let the Dough Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Filling Preparation

    Prepare the Filling

    In a mixing bowl, combine ricotta cheese, chopped imported ham, sliced mushrooms, shredded mozzarella cheese, black pepper, and Italian herbs. Mix until well combined.

Assembly and Baking

    Preheat the Oven

    Preheat your oven to 475°F (245°C).

    Roll Out the Dough

    Once the dough has risen, punch it down and divide it into two equal portions. Roll out each portion into a circle about 12 inches in diameter.

    Fill the Calzone

    Spread a layer of tomato sauce on one half of the dough circle, then place the filling mixture on top of the sauce, leaving a border around the edge.

    Seal the Calzone

    Fold the other half of the dough over the filling and press the edges to seal. Use a fork to crimp the edges together.
