Chamomile-Honey Syrup Preparation

Make the Chamomile-Honey Syrup
In a small saucepan, combine the dried chamomile flowers, honey, and water. Bring to a simmer over medium heat, stirring until honey is fully dissolved.

Steep the Syrup
Once it reaches a simmer, remove from heat and let it steep for 30 minutes. After steeping, strain the syrup through a fine mesh strainer to remove the chamomile flowers. Allow the syrup to cool completely before using.

Mix the Cocktail
In a cocktail shaker, combine 2 oz of Barr Hill Gin, 1 oz of Cointreau, 0.5 oz of freshly squeezed lemon juice, and 0.5 oz of the housemade chamomile-honey syrup.

Shake and Serve
Fill the shaker with ice and shake vigorously for about 15 seconds. Strain the mixture into a chilled cocktail glass.

Garnish
Garnish the cocktail with a sprinkle of bee pollen on top for an aromatic finish.
