Syrup Preparation

Make Chamomile-Honey Syrup
In a small saucepan, combine 1 cup of water and 1 cup of chamomile. Bring to a simmer over medium heat. Once simmering, remove from heat and let steep for 10 minutes. Strain the chamomile and return the liquid to the saucepan.

Add Honey
Add 1 cup of honey to the chamomile-infused water. Stir well over low heat until the honey is fully dissolved. Allow to cool, then store in a sealed container in the refrigerator until ready to use.
Cocktail Assembly

Combine Ingredients
In a cocktail shaker, combine 2 oz of Barr Hill Gin, 1 oz of Cointreau, 1 oz of freshly squeezed lemon juice, and 1 oz of the housemade chamomile-honey syrup.

Shake
Fill the shaker with ice and shake vigorously for about 15 seconds to chill the mixture.

Strain
Strain the mixture into a chilled cocktail glass.

Garnish
Sprinkle 1 tsp of bee pollen on top for garnish. Serve immediately.
