Prepare the Scaloppine

Sear the Veal

Flatten the veal cutlets with a meat mallet, then season with salt and pepper. Dredge in flour, shaking off excess. Heat olive oil and butter in a skillet over medium-high heat. Sear veal for 2-3 minutes on each side until golden brown. Remove and set aside.

Make the Sauce

In the same skillet, add minced shallots and sauté until translucent. Add sliced mushrooms and cook until they are tender. Pour in Marsala wine and chicken broth, scraping up any browned bits. Simmer for 5 minutes.

Combine

Return veal to the skillet and simmer for another 5 minutes, ensuring the veal is cooked through. Stir in chopped parsley before serving.

Cook the Pasta

Bring a large pot of salted water to a boil. Add trofie pasta and cook according to package instructions until al dente. Drain and set aside.

Combine with Cheeses

In a large bowl, combine cooked trofie pasta with all four cheeses: gorgonzola, parmesan, mozzarella, and ricotta. Season with salt, pepper, and fresh basil. Mix well.
