Make the Pasta Dough
In a large bowl, combine flour and salt. Make a well in the center and crack the eggs into it. Gradually mix the flour into the eggs using a fork until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
Bolognese Sauce
Prepare the Bolognese Sauce
Heat olive oil in a large saucepan over medium heat. Add onion, carrot, and celery, cooking until softened. Add the ground beef and pork, cooking until browned. Stir in crushed tomatoes, red wine, salt, pepper, and bay leaf. Simmer for 30-40 minutes, stirring occasionally.

Assemble the Lasagne
Preheat the oven to 375°F (190°C). Roll out the pasta dough thinly and cut into sheets. In a baking dish, layer pasta sheets, followed by Bolognese sauce, Besciamella sauce, a sprinkle of Parmesan, and mozzarella. Repeat layers until all ingredients are used, finishing with mozzarella on top. Bake for 30-35 minutes until bubbly and golden.
