Pork Preparation

Wrap and Sear the Pork

Preheat your oven to 375°F (190°C). Season the pork tenderloin with salt and black pepper. Wrap the prosciutto slices around the pork, covering it completely. Heat the olive oil in a skillet over medium-high heat and sear the wrapped pork on all sides until golden brown, about 3-4 minutes per side.

Add Brandy and Roast

Once seared, carefully pour the brandy into the skillet. Let it simmer for a minute to reduce slightly. Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

Rest the Pork

Remove the pork from the oven and let it rest for 5 minutes before slicing.

Sauté Apples and Vegetables

In a separate skillet, melt the butter over medium heat. Add the sliced apples and mixed vegetables, followed by the brown sugar and cinnamon. Sauté for about 8-10 minutes until the apples are tender and caramelized, stirring occasionally.

Plate the Dish

Slice the pork tenderloin and arrange it on a plate. Spoon the caramelized apples and vegetables beside the pork. Drizzle any remaining brandy sauce from the skillet over the pork and serve immediately.
