Panna Cotta
Prepare Gelatin
In a small bowl, sprinkle gelatin over water and let it sit for about 5 minutes until it softens.
Heat Cream
In a saucepan, combine heavy cream, sugar, and vanilla extract. Heat over medium heat until it starts to simmer.
Combine
Remove from heat, add the softened gelatin, and stir until fully dissolved. Pour the mixture into serving cups and refrigerate for at least 4 hours until set.
Chocolate Mousse
Melt Chocolate
In a heatproof bowl, melt dark chocolate over a pot of simmering water or in the microwave. Let it cool slightly.
Whip Cream
In a separate bowl, whip heavy cream until soft peaks form. Set aside.
Combine Ingredients
Fold the melted chocolate into the whipped cream, then gently fold in the beaten egg whites until fully incorporated. Spoon into serving cups and chill for at least 2 hours.
Fruit Compote
Prepare Berries
In a small saucepan, combine mixed berries, sugar, and lemon juice. Cook over medium heat until berries break down slightly and mixture thickens, about 5-7 minutes. Let cool.
