Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to form the fries.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the soaked fries to the hot oil in batches. Fry them until golden brown and crispy, about 5-6 minutes.

Drain and Season
Remove the fries from the oil and place them on paper towels to drain excess oil. Immediately sprinkle with salt and pepper to taste.
