    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until they are translucent.

    Add Seafood

    Add the shrimp and crawfish to the skillet. Cook until the shrimp turn pink and are cooked through, about 3-4 minutes.

    Add Mushrooms and Seasoning

    Stir in the sliced mushrooms, salt, and black pepper. Cook for an additional 2-3 minutes until the mushrooms are tender. Remove from heat and set aside.

    Whisk the Eggs

    In a mixing bowl, whisk the eggs until fluffy. Season with a pinch of salt and pepper.

    Cook the Eggs

    In a non-stick skillet, pour in the whisked eggs and cook on low heat until the edges start to set.

    Add the Filling

    Once the eggs are partially set, add the seafood filling and sprinkle the cheddar and Monterey Jack cheese on top. Fold the omelet in half.

    Finish Cooking

    Cook for another 2-3 minutes until the cheese is melted and the eggs are fully cooked.

    Gently slide the stuffed omelet onto a plate and top with lump crab meat and chopped parsley. Serve immediately.
