Prepare the Roast
Season the beef chuck roast with salt and black pepper on all sides.

Sear the Meat
In a large skillet, heat olive oil over medium-high heat. Sear the roast for about 4-5 minutes on each side until browned.

Combine Ingredients in Slow Cooker
Transfer the seared roast to a slow cooker. Add the chopped onions, carrots, celery, minced garlic, beef broth, bay leaves, and thyme.

Slow Cook
Cover and cook on low for 8-10 hours or high for 4-6 hours until the meat is tender.

Make Gravy
Remove the roast from the slow cooker and let it rest. Strain the liquid and make a gravy using flour and water if desired.
