Brewing Instructions

    Mashing

    In a large brew kettle, heat 5 liters of water to approximately 165°F (74°C). Add Pilsner malt and Carapils malt, and hold the temperature at around 152°F (67°C) for 60 minutes.

    Sparging

    After mashing, sparge with enough hot water to collect about 6.5 liters of wort in a kettle.

    Boiling

    Bring the wort to a boil. Once boiling, add 1 oz of Saaz hops. Boil for 60 minutes.

    Adding Hops

    30 minutes into the boil, add the remaining 1 oz of Saaz hops and the German Hallertau hops.

    Cooling the Wort

    After the boil, cool the wort quickly using a wort chiller or an ice bath.

    Fermentation

    Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal with an airlock. Ferment at 50°F (10°C) for 2 weeks.

    Bottling

    After fermentation is complete, dissolve 3 oz of priming sugar in a small amount of water, and add it to the beer before bottling. Bottle the beer and cap.

    Carbonation

    Let the bottled beer carbonate at room temperature for 1-2 weeks before refrigerating.
