Cook the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables
In a large skillet or Dutch oven, heat olive oil over medium heat. Add the bell pepper, onion, and celery. Sauté until softened, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute.

Cook the Meats
Add the andouille sausage to the skillet and cook until browned, about 5 minutes. Then, add the diced grilled chicken and shrimp to the mixture, cooking until the shrimp is pink and opaque.

Make the Sauce
Stir in the Cajun seasoning, diced tomatoes with juice, and chicken broth. Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavors to meld.

Combine with Pasta
Add the cooked pasta to the skillet and toss everything together until well combined. Season with salt and black pepper to taste.

Serve hot, garnished with chopped parsley and with garlic bread on the side.
