Prepare the Filling
In a bowl, combine the lobster meat, ricotta cheese, Parmesan cheese, truffle oil, salt, black pepper, and egg. Mix until well combined.

Make the Ravioli
Roll out fresh pasta dough to thin sheets. Place small mounds of the filling onto one sheet of pasta, leaving space between each mound. Moisten the edges of the pasta with water, then fold the sheet over to cover the filling. Press down around each mound to seal. Cut into individual ravioli.

Prepare the Vodka Sauce
In a pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Pour in vodka and cook for 2-3 minutes. Then, add crushed tomatoes and heavy cream. Season with salt, pepper, and red pepper flakes. Simmer for about 10 minutes.

Cook the Ravioli
In a large pot, bring salted water to a boil. Add the ravioli and cook for 3-5 minutes or until they float to the surface. Drain and add to the vodka sauce.

Serve
Toss the ravioli gently in the vodka sauce to coat. Plate and top with additional lump lobster meat. Drizzle with truffle oil if desired.
