Cooking Instructions

  1. 1

    Prepare the Ingredients

Chop the potatoes, carrots, and onion into bite-sized pieces. Mince the garlic.

  2. 2

    Cook the Bacon

In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the fat in the pot.

  3. 3

    Sear the Venison

Season the venison steaks with salt and pepper. In the same pot, add olive oil and sear the venison for about 3-4 minutes on each side. Remove and set aside.

  4. 4

    Sauté the Vegetables

In the same pot, add the chopped onion and garlic. Sauté for 2-3 minutes until soft. Add the carrots and potatoes, stirring for another 5 minutes.

  5. 5

    Add Broth and Seasoning

Pour in the beef broth and add thyme, bay leaves, and the cooked bacon. Stir to combine.

  6. 6

    Simmer

Return the venison to the pot. Bring to a boil, then reduce heat to low and let simmer for about 1 hour, or until the venison is tender.

  7. 7

    Serve

Remove the bay leaves. Serve hot in bowls, garnished with fresh herbs if desired.
