Prepare the Potatoes
Peel the potatoes and grate them using a box grater or food processor. Rinse the grated potatoes in cold water to remove excess starch, then drain well.

Finely chop the onion and set it aside.

In a large mixing bowl, combine the grated potatoes, chopped onion, salt, and pepper. Mix well to combine.

In a large skillet, heat the vegetable oil over medium-high heat until hot.

Cook the Hash Browns
Scoop about a cup of the potato mixture into the skillet, spreading it out evenly. Cook for about 5-7 minutes until the bottom is golden brown. Flip and cook the other side for another 5-7 minutes until crispy.

Repeat the cooking process with the remaining potato mixture, adding more oil to the skillet as needed.
