For the Fried Green Tomatoes
Method
Cooking Instructions
- 1
Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Sprinkle with salt and let them sit for about 10 minutes to draw out excess moisture.
- 2
- 3
Bread the Tomatoes
Dredge each tomato slice first in the flour, shaking off the excess. Then dip in the buttermilk mixture, and finally coat with the cornmeal.
- 4
Fry the Tomatoes
Heat the oil in a large skillet over medium-high heat. Once hot, carefully add the breaded tomato slices, working in batches if necessary. Fry until golden brown, about 3-4 minutes on each side. Remove and place on paper towels to drain.
- 5
Prepare the Topping
While the tomatoes are frying, prepare the topping by mixing the lump crabmeat with crumbled bleu cheese in a bowl.
- 6
Serve
Once the tomatoes are fried, place them on a serving platter. Top each slice with the crab and bleu cheese mixture. Drizzle with balsamic reduction before serving.
