Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add sliced onions and mushrooms, sauté until softened and caramelized, about 10 minutes. Season with salt and black pepper.

Assemble the Sandwiches
Slice the French rolls in half. Spread a layer of horseradish sauce on the inside of each roll. Layer with sliced roast beef, sautéed onions, and mushrooms. Top with Swiss cheese.

Melt the Cheese
Preheat the oven broiler. Place the assembled sandwiches on a baking sheet and broil for 2-3 minutes, or until the cheese is melted and bubbly.

Prepare the Au Jus
In a saucepan, heat the beef broth over medium heat until simmering.

Serve
Serve the sandwiches hot with a side of warm beef broth (au jus) for dipping.
