Brewing Instructions

Mashing
Heat 15 liters of water to 68°C (154°F) and add the pale malt, wheat malt, and crystal malt. Maintain the temperature for 60 minutes.

Sparging
After mashing, sparge with additional water to collect around 22 liters of wort.

Boiling
Bring the wort to a boil and add Citra hops. Boil for 60 minutes, adding Hallertau hops in the last 15 minutes of the boil.

Cooling
Cool the wort quickly to below 24°C (75°F) using a wort chiller.

Fermentation
Transfer the cooled wort to a sanitized fermentation vessel and add the yeast. Allow fermenting at around 20°C (68°F) for 1-2 weeks.

Adding Apricot
After primary fermentation, add the apricot puree to the fermentation vessel and let it condition for an additional week.

Bottling
Once fermentation is complete, bottle the beer with priming sugar and let it carbonate for 1-2 weeks.
