    Prepare the Côte de Boeuf

    Remove the Côte de Boeuf from the refrigerator and let it sit at room temperature for about 30 minutes before cooking.

    Season the Meat

    Generously season both sides of the Côte de Boeuf with kosher salt and freshly ground black pepper. Rub with minced garlic, fresh rosemary, and thyme.

    Preheat the Grill or Oven

    Preheat your grill to high heat or your oven to 450°F (232°C).

    Sear the Steak

    In a large cast-iron skillet or on the grill, heat the olive oil over medium-high heat. Sear the Côte de Boeuf for 4-5 minutes on each side until a golden crust forms.

    Finish Cooking

    Add the butter to the skillet or grill and use a spoon to baste the steak with the melted butter. Cook until the internal temperature reaches your desired doneness (about 130°F (54°C) for medium-rare).

    Rest and Serve

    Remove the Côte de Boeuf from the heat and let it rest for 10-15 minutes. Serve on a sizzling platter, sliced and garnished with fresh herbs.
