Prepare the Chicken
In a large bowl, combine buttermilk and cajun seasoning. Add chicken breasts and marinate for at least 30 minutes.

Prepare the Breading
In another bowl, mix the flour, salt, and black pepper. Remove chicken from the marinade and dredge in the flour mixture, ensuring it is fully coated.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded chicken and fry for about 5-7 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Make the Rodeo Sauce
In a small bowl, combine mayonnaise and hot sauce. Mix well.

Assemble the Sandwich
Spread a generous amount of rodeo sauce on the bottom half of each hamburger bun. Place a piece of fried chicken on top, add pickles, and cover with the top half of the bun.
